Dandelion Pancakes:
Ingredients:
1/2 cup whole wheat flour
1/2 unbleached all-purpose flour
2 tsp baking powder
1 tsp cinnamon
pinch of salt
1 egg
1 cup milk
2 tbsp vegetable oil
1 cup dandelion flowers
Method:
Mix the dry ingredients. In another bowl, beat the egg and add the milk and oil. Stir into the dry mix. Add the dandelion flowers and blend. Heat large skillet over high heat until hot. Drop batter by spoonfuls and cook over medium heat until bubbles form on suface and underside is golden brown. Flip and cook just until second side is lightly browned. Especially good with dandelion syrup or strawberry jam.

Dandelion Syrup
Ingredients:
250 dandelion flowers
8 cups of water
1 orange
1 lemon
1 lime
5 cups of sugar
Method:
Grate peel from lemon and from orange. Cut into the orange, lemon and line, then squeeze to release the juices into a cup. Coarsely chop the fruit, including the pee. Add chopped fruit, juices and peel to water with dandelion flowers and simmer for 1 1/2 hrs. Let sit overnight. Strain through a cheesecloth and reserve liquid. Add sugar to liquid and simmer 1 1/2 to 2 hrs. Pour hot syrup into hot sterilized canning jars or glass juice bottles. Makes about 9 small jars c/o Eillen Sark.
